Glenwood Springs Vacation

We traveled to Glenwood Springs for a three day weekend. What a blast. Here are some highlights:

The drive: all of us miraculously survived

A maze: completed in a record (for us) 23 minutes! Unfortunately to get a prize it needed to be solved in 7 minutes.

We spent Sunday playing at the Hot Springs Pool. Fed by hot springs, the pool temp was around 90 degrees.

In an effort to be creative with our CSA share, I saw this recipe for a Beet Bundt Cake and decided to give it a try. With it's great reviews I fully expected it to be a tasty treat. I was quite wrong. It is a chocolate cake with a unique beety aftertaste. I guess my search for uses of beets continues!

Backyard Camping

Dan and Jonah had a camping trip in our backyard this weekend. Eli slept in the comfort of his own bed but helped them get the tent set up. Unfortunately there was an air mattress issue so it was back in everyone's own room at 1am but before then it was a great time!

Rueter-Hess Reservoir

Parker has been constructing a reservoir for the past few years. This weekend they had a self guided tour to see the progress. It should be opening in 2012 and we are so excited to have a place to play in the water so close to us!
